Ok I will cop to it.
I love to cook, I love exotic ingredients especially meats that many consider exotic.
While I have not used various African species I have used a fairly wide range of American game from antelope to various reptiles.
So what do ya folks think. Are animals taken as game <responsibly mind you in season and from areas that have been ID'd as in need of control>
Is it different than cooking say fresh wild caught fish <if so why>
How would ya feel if for example you were served Rattlesnake on a date meal?

Re: Exotic meat
Mon, September 15, 2008 - 4:38 PMi don't see it as any different from cooking wild-caught fish, or venison, or what have you...provided your caveats of responsibility apply.
and i would be delighted if someone served me rattlesnake...provided i was warned...i have a sense of adventure and i'll ty anything once. i can see where some people might be a little creeped out by it though.
is this a test you spring on your dates, Jsin? -

Mon, September 15, 2008 - 4:56 PMNo not really despite the online persona in interpersonal relationships I make sure it is based on negotiation and respect. this includes eating habits... That being said I am thrilled when someone has a sense of adventure in culinary realms

Re: Exotic meat
Mon, September 15, 2008 - 4:41 PMi've eaten rattlesnake and frog and gator.
i don't really consider those things to be all that exotic
even cuy (guinea pig) in Ecuador.
a lot of the foods that americans consider exotic or strange
are just normal faire for other people.

Re: Exotic meat
Mon, September 15, 2008 - 5:00 PMCoui <spelled phonically>rocks hard... like bunny The texure though is more subtle while the flavor a bit richer
Frog I was unimpressed really while gator I liked a lot. Again texture kinda like snake and iguana only with more textural body.
One of my dreams is to do culinary traveling where I can eat what the locals dig. To me here the cuising is far too homogeneous though I could see how a bushman for example would find a Big Mac an anomaly

That would be an awesome thing. Personally, however, I think I would draw the line at any of those things made with bugs that I see on the Discovery Channel... -

Re: Exotic meat
Mon, September 15, 2008 - 5:17 PMA lot is insects are great. Also in Montana I took a lot of survival classes. A good many grubs are wonderful eats... Many ants taste a bit acidic but if you like the flavor profile that can be really good. Crickets and grasshoppers taste like the veggies they eat kinda grassy

i think that's outside of my realm of adventurousness. -

Re: Exotic meat
Mon, September 15, 2008 - 8:18 PMI tried those too, but there was so much chocolate it really wasn't like you could even taste the ant. -

Re: Exotic meat
Mon, September 15, 2008 - 10:03 PMLiving in Montana and doing what I do for a living I've come into contact with all manner of wild game and birds, but I wouldn't classify anything I've eaten or prepared as particularly exotic. Had rattlesnake twice and the first time it was phenomenal because it was lightly smoked before being grilled! The second was just kinda fishy and greasy cuz the person cooking it didn't really seem to know what he was doing. And even though I'm a chef by trade there are still some foods that I know I would simply refuse to even try simply due to aesthetics and perhaps some amount of anthropomorphism. Like wild cat or dog- nope. Couldn't bring myself to try those unless it was purely a survival thing, but even then I imagine I'd go for prairie dogs, rabbits and the like first.
I certainly don't judge those that have a more adventurous palate than I do, and in fact am a bit envious.

Re: Exotic meat
Mon, September 15, 2008 - 5:10 PMSorry, JSin, I AM GETTING TONY BOURDAIN'S JOB! You'll have to fight me for it.
I have had gator and it tasted like fish sticks. I would try exotic meats if acquired ethically. Other than that, the only other meats that are not exactly exotic, but are outside the norm are buffalo, ostrich and venison.
I hear chimp is gross and mountain lion is pretty good. -

Re: Exotic meat
Mon, September 15, 2008 - 5:15 PMI don't want his Job just his experiances
If your Gator tasted like fish sticks they didn't do it right... I recommend smoking though I have had it deep fried as well and cod could not shine a light on it.
Cougar is quite good... Chimp I would have some hesitance kinda like human. But that is an admitted emotional response

Re: Exotic meat
Mon, September 15, 2008 - 4:43 PMOne of the best meals I have ever been treated to on a date was gazelle paired with Cristalle.
I adore game (the flavor and texture) – especially as it is usually taken from the wild, as opposed to many vegetarians' (valid) complaints about factory farming.
I would test the waters, JSin, to see if your date were open to meat-eating and adventurousness – but I would find it interesting and honest (as a carnivore), personally. -
-
Re: Exotic meat
Mon, September 15, 2008 - 5:04 PMIf ya love richer gamy meats I would give Moose a try. Probably one of the most agressive American Meats out there.
Carnivore or Omnivore meat takes a different tone. I have used bear <love it for Chili tough if grilled> and both wolf and cougar. So yeah I have eaten dog and cat. Carnivore meats are best stewed.
Most the time I spent living in Montana my best friends were native. This perhaps has given me a different perceptive on the relation between game and man.

Re: Exotic meat
Mon, September 15, 2008 - 5:41 PMI find that when asked ahead of time my first response is "no thanks" but when presented with the food already prepared by someone who I know is knowledgeable it doesn't seem all that big of a deal. I've had gator, venison, crickets, iguana and horse that way. I tend to be a when in Rome do as the Roman do kind of traveler.

Re: Exotic meat
Tue, September 16, 2008 - 2:40 AMhmm - im assuming you were looking for gals opinions - since im assuming youre hetero - but ill go ahead and chime in...
ive had several "semi-exotic" meats in culinary contexts. favorite so far was ostrich. or maybe it was octopus. (have never had orangutan, but figured i needed to add another o-species... lol)
oddly the part i have the most trouble with is the necessary political-correctness-aspect of it all. i eat meat (and veggies on occasion) and im not a stickler about the where/why/hows of the meats demise (or life).
i do have some morals and also can anthropomorphize, but i also have a fairly strong survival-instinct that says - if it was alive and is now dead, and im hungry, i would rather eat it than have it go to waste...
i have seen shark-fin on the menu, but never ordered it cuz it bothers me that it was most-likely caught and released - only to die - as i saw on some nature channel awhile ago. otoh, if the chef came out and said - would i please eat the shark-fin since it would go bad tomorrow and it was here anyway - id go ahead and eat it.
and there is nothing more satisfying than to cook/eat a meal that was caught/hunted by yourself. really brings out the circle-of-life-instincts in me.
most gay guys ive encountered that i got along with - had similar opinions about food. sharing a meal (and/or its preparations) is truly a good way to judge compatibility in an upcoming relationship. theres a reason the classic date was dinner and a movie... -
-
Re: Exotic meat
Tue, September 16, 2008 - 9:42 AMi have moral refusals like shark fin because they DO slash them off
and "release" the shark to die. i do my best to avoid farmed animals...
but part of that is that i have the luxury to do so - i grew up on venison
(deer, elk, moose, caribou) and didn't even HAVE beef until i was 14.
there isn't much i wouldn't try, but how it was acquired, killed, etc does
matter to me - hunting on foot after an elk is one thing, shooting into a
herd from a helicopter is another.

Re: Exotic meat
Tue, September 23, 2008 - 8:08 PMPersonally i LOVE rattlesnake, used to go to the RaTTLEsnake Roundup in Texas when i was growing up there, you can have it every way imagininable, stew, jerky, in chili, shish-ka-bob, etce etc. LOVE it. I am one of those strange people that will eat anything at all, any kind of meat, ( except for possum or SPAM, id rather die than eat SPAM, and possum, well anything that the other critters wont eat, i aint touchin) -
-
Re: Exotic meat
Thu, September 25, 2008 - 4:41 AMgive spam a chance ! lol
there are many ways to "prepare" meats. if youve tried it, and dont like it, fine. just dont dismiss something outright due to peer-pressure (other critters wont eat). ive had spam quite a few times - most times i did NOT like it, but once or twice it was actually ok. like everything, it depends upon presentation/preparation sometimes...
no comment on skipping possum - when i find them around here - i kill em and toss them in the trash. it never occurs to me to eat the damn thing - same with rats and mice. my perspective is that they are vermin and im (oftentimes) a typically wasteful-american... -
-
Re: Exotic meat
Fri, October 3, 2008 - 1:15 PMi have personal issues with spam, was VERY poor growing up and ate spam every day of the week, griled, snadwiches, hot dogs, my god i had spam so many ways i thought id puke from it, i HATE spam and when i was a kid i promised myself that when i got on my own id never touch the damn stuff EVER again. IM DEAD serious, id rather DIE than eat that crap again.
anything else, sure, ( cept possum) but NEVER AGAIN will i touch that noxious psuedo meat .
-
Re: Exotic meat
Fri, October 3, 2008 - 1:49 PMReally, harold, you kill a possum just cause you think it's vermin ? No other reason? Cause that particular living creature holds no worth for you. you take its life. And then toss it in the trash.
At least my grandpa. skinned the things he considered vermin and used the pelts for something
Huh. -
